Central Asia generally doesn't have a great reputation for its food, and while that's not entirely undeserved, there is some amazing food, especially that of the minorities. There are many, many Central Asian recipes posted on this blog, but here are a few of my favorites. And don't miss this wonderful site for Uzbek cooking.
Also, here's a series of recipes I posted while I was in Kyrgyzstan. Most aren't Central Asian, but all were cooked there using almost exclusively ingredients you can find in Bishkek.
Laghman (thick wheat noodles)
Central Asian style pulled noodles (the easy way) (another post with photos)
Hand-stretched noodles (the cutting way)
Sauces for Laghman
Green garlic sauce
Vegetarian summer sauce
Simple cabbage topping
Pepper and tomato topping
Napa, chinsay, and carrot sauce
Plov (rice with meat and vegetables- like pilaf)
The way I make plov
Breads (You'll see some recipes for naan here. Keep in mind that this is Central Asian naan, not Indian. It can be very different.)
Naan, Central Asian style
Naan, Afghan style
Salads (some cooked, some not)
easiest salad here is to simply chop up some tomatoes, cucumbers, and
onions, adding some salt and red pepper as you like. That's it.
