Eating in Central Asia

Central Asia generally doesn't have a great reputation for its food, and while that's not entirely undeserved, there is some amazing food here, especially that of the minorities.  There are many, many Central Asian recipes posted on this blog, but here are a few of my favorites.  And don't miss this wonderful site for Uzbek cooking.

Laghman

Central Asian style pulled noodles (the easy way)
Hand-stretched noodles (the cutting way)

Green garlic sauce
Vegetarian summer sauce
Simple cabbage topping
Pepper and tomato topping

Plov

Kyrgyz-style
The way I make plov

Breads

Borsak
Naan, Central Asian-style
Naan, Afghan-style
Kattama
Coming soon- Komoch naan

Salads (some cooked, some not)

Tomato-Eggplant Salad
Carrot Salad
Rainbow Salad
The easiest salad here is to simply chop up some tomatoes, cucumbers, and onions, adding some salt and red pepper as you like.  That's it.

Ashlyamfu (in progress)
