Chihuahua and Oaxaca

Now we've tried the Chihuahua and Oaxaca cheese.  The Chihuahua was mild and good for melting (seems to be a theme here), but the Oaxaca is delicious.  I got some fresh Oaxaca at the market together.  It's often sold in balls of coiled up cheese and it has a string cheese texture.  It looks like mozzarella but I think it has more flavor. I think it's been my favorite so far.  It's good for snacking or melting and I bet it would make amazing pizza.
